Course contents:
The course contains theory at PhD level regarding food engineering technology, such as mass and energy balance, material characteristics, heat transportation etc. and some information on process control. In addition, important unit operations such as blanching, pasteurising, sterilising, baking, frying, infrared, ohmic and dielectric heating, cooling and freezing are covered. The course is a PhD course and involves discussion groups/independent study.
Learning outcome:

Knowledge: Students will aquire deeper knowledge in relation to unit operations in food engineering for the production of different types of food; like cooling, freezing, thawing, warming, heat conservation and sorting.

Skills: The students should be able to evaluate unit operations in the food industry and use or implement measurement methods into food production.The skills represent tools achieving the United Nations goals on sustainability.

General competence: They will also acquire a thorough insight into conditions regarding machinery, instruments and other equipment in the food industry, and further knowledge of measurement methods.

MVI280 and MVI281 or equivalent.

Supervised discussion groups: 28 hours. Self-study: 272 hours. 300 hours in total.
