Abut the project
Holm Gård is the owner of the project. They produce onions in Lågendalen in Larvik municipality and sell most of them as peeled onions. Because of the peeling, the skin in the side stream accounts for 20-30 per cent.
Holm took the initiative for VegiFuture and contacted NMBU as he believed it should be possible to utilise this side stream from the production of peeled onions for new products but needed help for such product development.
Increased durability
In addition to utilising the side stream from onion production, the aim is to improve the shelf life of the peeled products. This will be done by investigating different treatments before and after packaging.
Less waste at the consumer and in production
Because the onion products are ready to use, there is minimal waste at the customer's premises. When Holm Gård puts in place a solution to utilise the side streams from the production of peeled onions, the total waste will be much lower.
At the same time, the goal is to develop a range of completely new products. To achieve this, an important part of the VegiFuture project is to develop new technology.
Increased profitability - better for the environment
Better utilisation of side streams provides a win-win situation for both the environment and the economy. The farmer improves his profitability by being able to offer more new products from the side streams, and onion peelings and obsolete onions go from being waste to becoming valuable products.
