About the project

This project is led by Svein Halvor Knutsen, Nofima

The main objective of this project is to facilitate green technology towards plant-based food in Norway with a significant proportion of Nordic raw materials into attractive and healthy products with low environmental footprint. The project focus on protein crops grown in Norway as faba bean and peas, and cereal, and quality requirements needed for processing of healthy and techno-functional products. The project shall also investigate the potential to increase production of plant protein sources in Norway.

Backgruound

A shift towards increased use of plant food has positive effects on health and environment. There is a strong need to find and develop new, healthy and attractive plant-based food products, based on Norwegian raw materials. The Norwegian agricultural sector and food industry needs more knowledge on the selection of suitable plant material combined with green technology processing to maintain national food self-sufficiency, secure employment, and remain competitive. Furthermore, looking at extended utilisation of protein sources, there are needs to focus on a complete utilization, including side streams.
