Knowledge
By the end of the course, the student should have acquired a solid, fundamental theoretical understanding of:
- The concept of quality and the characteristics that determine the quality of aquaculture products
- A good understanding of various analysis methods and control/influence options for key quality attributes
- Detailed knowledge of key sensory, nutritional, and technological quality attributes, as well as awareness of ethical and hygienic quality
Skills
Through lectures, exercises, and field trips to companies and applied research environments, students will gain insight into the key principles for quality management throughout production.
General Competence
Acquire a basic understanding of the concept of quality, definitions and needs, as well as the ability to measure and manage quality.
