About this course

Key and current topics related to the quality of aquaculture products are presented through lectures and exercises. The industry's focus on quality management and quality issues is presented through excursions to relevant companies and applied research environments. The students present their impressions by preparing an excursion report that focuses on the practical handling of quality issues.

Learning outcome

Knowledge

The student will during the course have gained a solid theoretical understanding of:

  • Quality and the components responsible for quality of aquaculture products
  • Insight into different analytical methods and possibilities for influencing/improving important quality parameters
  • The students are further expected to gain detailed knowledge related to central sensory, nutritionally and processing related quality parameters, as well as the importance of ethical and hygienically safe products

Skills

  • Insight into the factors regulating quality in practical production will be gained through the excursion and visit to applied research institutions

  • The student is presented to the basic principles of quality, definitions and the needs for appropriate analytical methods and ways of influencing quality
  • Learning activities
    Lectures, exercises, excursion and report writing.
  • Teaching support
    The students' work is supported through feedback during the field trip and report preparation, as well as the availability of the teachers for questions related to the subject and course. Lectures are made available on Canvas, along with relevant literature.
  • Prerequisites
    Basic knowledge of chemistry and biochemistry.
  • Recommended prerequisites
    Basic knowledge of aquaculture/biology.
  • Assessment method
    Written multiple choice examination (home exam).
